Sodium metabisulfite, chemical formula Na₂S₂O₅, is white or slightly yellow crystalline powder/small crystals with special odour. Soluble in water to form acidic solution. It oxidizes upon long term air exposure. Keep tightly sealed before and after use; long time storage is prohibited.

Sodium metabisulfite is divided into industrial grade sodium metabisulfite and food grade sodium metabisulfite.
